The recipe is based on 10 pou...Thanks for reading. <br />The recipe is based on 10 pounds of meat total so if you cut back on the meat did you also cut down all the other ingredients? You'll need to cut back on the spices. This applies to all the spices on the list. If you cut the meat back to just 4 pounds that's decreasing to meat by 60%. You can decrease the spices by 60%, but for the sake of sanity, next attempt I would suggest cutting the meat in half (5 lbs). Then all the ingredients can be cut in half as well. When I make these in casings ...Thanks for reading!<br /><br />When I make these in casings one batch fills 2 - 2 1/2 casings depending on how tight you're able to pack them. Now these are the Red Fiberous Casings. I've found them at any decent outdoors shop (Cabela's, Gander Mountain, etc…). <br /><br />Recently I've actually made them just in a loaf pan. Same recipe and method. If you can work it out, I'd really suggest one of the sites on the shoreline. 6, 7, 9, 24, 25, 27, 29, 45, 46, or 48 will put you right on the shores of the Allegheny reservoir. If you're planning on fishing or boating you can't beat being on the shoreline. These are premium sites so you're going to need to reserve a site in advance at: http://www.reserveamerica.com/camping/red-bridge-pa/r/campgroundDetails.do?contractCode=NRSO&parkId=70315 <br /><br />If you're planning on seeing a few sights while staying Red Bridge you'll be near the Kinzua Dam, which makes the Allegheny Reservoir. The town of Kane, is a fun stop with little restaurants.
